Hello and many thanks for your question. This may seem like an easy question to answer, but an omelette can be made from many different ingredients.

Most of the time I use 2 eggs, potato's, onions, fresh chopped herbs, seasoning with melted butter rather than cooking oil. As for the fillings, you can use cheese, diced ham, crispy bacon, sautéed mushrooms, peppers or tomatoes, caramelized onions.

It is really up to you and your taste buds.

A traditional Irish breakfast consists of - bacon, eggs, black pudding, mushrooms, potato bread, soda bread, tomatoes, sausages. Everything is fried or grilled.😋😋😋

I often have the following - pastry, fruit, toast, coffee. If no pastry, then cheese, salami etc.

dinner tonight was spaghetti & meatballs. The meatballs were cooked in a homemade sauce of onions, garlic, chopped tomatoes, thyme & basil, tomato puree. I had to cook both gluten free and ordinary spaghetti pasta which were cooked in separate saucepans.

oh for me you can never beat a good old full English - which has a lot of similarities to the Full Irish. I haven't had potato bread in year though!

Dinner yesterday evening was with 8 friends and I slow roasted a brisket with spices then served it with chunky chips, homemade coleslaw, corn on the cob, pepper sauce, and a green salad topped with dry-fired haloumi. to follow was meringue roulades, homemade raspberry sauce and freshly picked raspberries from the garden. The meal was also served with a french red wine.
