Welcome to the forum!
The more you fly, the more you get stars awarded. If you check for each destination before you select it for a new flight, on the left below the picture, you can find the stars. When taping the picture you can find out how many flights you need to get the next star.
That's how you collect the stars and can access to new destinations.
