I am surprised to learn that connecting multiple games to one Google account can result in something not good.

I have one google account which I use with all my tablets. I have different Airport City games on each tablet (all are android tablets). Each game seems associated with the unique 'friend code' that is created for each tablet. When Airport City would no longer run on my oldest android tablet, I had GI support 'transfer' my long running game (level 60+) from that device to my newest android tablet. The two tablets had different 'friend codes' and GI support transferred my game from the 'old' friend code to the 'new' friend code. When I launched Airport City on the new tablet, my city from the game on my old tablet was loaded. My various Airport City games are neighours with each other so that I can send gifts to help complete buildings.

I have been using the same Google account on all my tablets without any problem, ever since I bought my second tablet, which was some 4 years ago. I do this so that I can continue a game on one tablet when the first tablet has to be recharged. Airport City is one of few games that seems to be unique to a device (a tablet), unlike 'FarmLife" or "Zombie Castaway", which can be loaded from a saved game on the cloud to 'replace' the saved local game on the tablet.

Just my two cents worth.

Yes, You have to make different Google accounts to connect to your different games as connecting multiple games to one Google account can result in something not good.
It's easy to create Google account :)

Me, too. I have several android games I use for fuel all with the same google account. I would hope GI could still restore a game with the unique "friend code", and we wouldn't have to depend on google play.

@Canadian Cowboy , You can unlink your Google Play Games account and restore through support if you want.
Not all players have multiple games so it's good for them to connect to Google account.
And I too have multiple games, but I prefer making multiple Google accounts as it's easy and convenient for me.

If I have two Google account in my tablet / phone, can I choose which Google account to link Airport City to?

I have 2 accounts too.
1 old and the other new.
I plan to move the game with the new accounts and keep the old one.
After few days, the new account is pregressing to connect to the game.
I will try later to move with the new account.
